A fisherman and his catch. The fish was snagged in the Missouri River, just south of our home. Paddlefish are only found in the Missouri River and the upper reaches of the Yangtzee River in China. Roe from the females is highly prized as caviar. Some say it is equal to the Beluga caviar that is imported from Russia.
View of the fish's paddle & mouth. The paddlefish has no teeth, but rather a straining device in his mouth. They also have no bones, only a cartiledge body frame. Since they feed by 'straining' plankton from the water, they aren't caught by using a hook and bait. They are snagged with a large treble hook. Fishing them involves casting and retrieving the hook, until you snag one.
